International foodie resorts are an excellent way to enjoy chef created local cuisines while exploring the surrounding sights and attractions. I call it a “perfect day” when I spend the morning and afternoon exploring new territory before returning to a luxurious resort in the evening where dinner is waiting on me.

Before getting to the resorts, I will share a super easy and quick meal I prepare from time to time that is really yummy and that doesn’t keep me in the kitchen long.  As with any pasta dish, make sure have enough wine to go with dinner.

Pasta dishes are some of my favorite meals. This is an easy and healthy dish to make either at home or in a resort room while on vacation. You can tweak this recipe to turn it into anything you like and kids love it.

Use simple ingredients like fresh veggies (I didn’t use a bell pepper but that would be great too), fresh raw shrimp, pasta and an orange with olive oil and whatever spices you like.

You can use any vegetables you want.  It all works!

Cut, slice and dice veggies in the bite sizes you prefer. I love onion but not too chunky so I shave the onion so that it’s in hair thin slivers.

Take cucumber, tomato, celery and carrots (bell pepper too) and cut them up and place into a bowl off to the side but make it a good sized bowl because you will add all the ingredients together later for serving.

I like to peel the carrot rather then cut into chunks or slices but that’s just me. You can do whatever you like best.

On the stove, pour roughly 2 to 3 tablespoons of olive oil in a skillet and saute your shrimp in salt and pepper till it’s nice and pink and done.

Also on the stove in a separate small saucepan combine honey, soy, garlic, olive oil and juice from a couple of squeezed orange wedges (or just pour in some orange juice) and set at a low heat. You do not want this to boil because all you want is for the ingredients to mix together and form a liquidy sauce that’s easy to pour and mix.

Pasta… just cook as the box or package says. I used linguine noodles but really any kind of pasta will do.

Once the shrimp is cooked and the pasta is ready and the water drained, combine it all together and stir. I also will shake some dried oregano onto the finished product and mix but you can add whatever is yummy to you and make it more or less spicy.

This dish is great to eat immediately after cooking or you can cover and place in the fridge for awhile for a nice chilled dinner on a super hot summer day.

Cheap Airline Deals

Celery – 2 large stalks or 3 small

Tomato – 2 large

Red Onion – shave or cut half

Cucumber – 1 really large or 2 small

Salt/Black Pepper – shake in to your taste

Shrimp – 1 pound peeled

Olive Oil – 2 tablespoons to saute shrimp

Carrots – 2 peelings or can dice

Cooked Pasta

Sauce:

Honey – 1/4 cup or however sweet you prefer

Olive Oil – 1/8 cup

Soy Sauce – 1/3 cup

Orange – 2 wedges for squeezing out juice

Garlic Powder – sprinkle in to your taste

Completed Dish:

Dried Oregano – Sprinkled in to taste and stir
