The years I spent living and traveling in Europe were some of best adventures ever and I plan on returning soon with kids in tow this time.  One of my favorite areas was the Tuscan countryside and the Italian food and wine hotels that spoil you with unbelievable dishes and the perfect Italian experiences.

Below is a list of some really great Italian hotels and resorts for foodie and wine folk like me but first, I have a super easy chicken pizzaiola recipe to share that is a hit at my house.  To tell you the truth, I found the recipe years ago on the back of a ketchup bottle and, with a few minor tweaks, it is a dish I cook regularly now.

I am not one to want to hang out in a kitchen very long but, I like delicious food. So with keeping these two aspects in mind, I began making a chicken pizzaiola dish that is so quick and simple but really tasty. 

And the part I really love, there is no mixing, no measuring and no messy pots to clean.

 

INGREDIENTS:

Raw Chicken Breasts: (A regular package of chicken from the grocery)

Ketchup (of course)

Cheese: You can buy the shredded package or the slices. (I like to mix Mozzarella and Swiss but it’s all about what you like)

Parmesan Cheese

Dry Herbs:  Basil, Oregano, Garlic Powder, Parsley etc…just whatever you prefer. 

Olive oil to oil your foil or baking dish.

Preheat oven to 400 degrees. Place chicken, I usually slice down the middle to create 2 thin pieces, on an oiled foil lined cooking dish or cookie sheet and lightly drizzle a little olive oil over the top of them.

Salt and pepper lightly at this point if you wish, then sprinkle your bread crumbs generously over the chicken. Place in oven until bread crumbs turn a tannish baked color, roughly 15 minutes.  You can check if done by cutting a  piece of chicken off to see if the inside of the chicken strip is white and flakey.

While you have your dish out of the oven, pour or squirt ketchup on top of all your chicken slices. I usually put a lot but that’s just me. Apply to your liking.

Now sprinkle with your herbs to your desired taste. Just sprinkle one herb after the other on top of your ketchup covered chicken. Do not mix anything.

Next, and lastly, apply the cheese on top, including a yummy sprinkling of the parmesan cheese, and place back in the oven. Allow a couple of minutes for the cheese to melt then take out the dish from the oven.

You are now finished with no mixing bowls to wash and put away.

It is a delicious meal and goes well with a side of salad or, what I like to put with it, baked asparagus with a side of cinnamon baked apples.

But whatever you like to serve with this dish, be sure that you don’t forget the wine! Hope you enjoy!!
