An exquisitely prepared dinner, cooked by a professional chef, waiting for me after an exciting day spent sightseeing is one of my favorite parts of travel. USA foodie resorts indulging in fine dining, luxurious surroundings and friendly folk have made for some of the most memorable and delightful experiences ever.
Before we browse some awesome US foodie resorts, I would like to share a delicious healthy dinner idea with you, baked tomato herb salmon. So easy, or I wouldn’t do it, super quick and delicious while being healthy.

Charleston, SC is definitely one of my most favorite places to visit. It’s just one of those places that has everything to offer.
The cuisine of Charleston is filled with southern charm and prepared with love and you can taste this in every bite. Tomato herb salmon is a dish I had while dining in a courtyard in old Charleston on a beautiful summer evening underneath a 300 year old magnolia tree. It was exquisite so I wrote everything down to prepare this dish for when I was back home.
Baked Salmon saturated in a tomato herb sauce is wonderful. And the great thing is you can change it up any way you wish and it’s all good. (Especially if you sip on some wine while preparing.)
Ingredients:
2 pounds of salmon
2 tablespoons of olive oil
Black pepper to taste
Relish Ingredients:
3 large tomatoes
Half of a fresh orange to squeeze
1 tablespoon of basil or more if you wish to add more spice
Oregano leaves to sprinkle to your liking
Dry garlic powder to your liking
1 tablespoon of olive oil
Preheat oven to 400. Line a cookie sheet with parchment paper and place salmon slab skin down on sheet. Pour olive oil over salmon and sprinkle pepper to your taste then place in oven.
As for the relish, dice those tomatoes to small pieces and place in a bowl. Put in your ingredients until, when you take a sample taste, you absolutely love it.
When salmon is done, take it out of the oven. I usually have a large slab in for around 30 to 35 minutes. Just be sure that when you can take a fork to it, it easily flakes off with no resistance.
Grab your bowl of relish and liberally cover the salmon. So easy! You are finished with dinner and ready to eat. I like this cold as leftovers the next day. It’s also fantastic on a cracker.
Oh, and don’t forget delicious wine.
